Oleocanthal derives from the Latin Oleo-, olive, canth-,sting, al-aldeyde and is a rich antioxidant/throat irritating compound that American Scientist Dr. Gary Beauchamp identified after a trip to Italy, when he tasted some high-quality EVOO from Sicily and noticed that the pungent sensation the oil provided in the mouth was the same as ibuprofen and thus he identified the oleocanthal compound.  Dr Beauchamp first tried in Italy said if they are of high quality they will likely make you cough as they are rich in oleocanthal, which has proven to help against diseases such as Alzheimer, arthritis and cancer.
